I'm winging a chili.

Browned ground beef and pork, diced onions, beef stock, diced tomatoes, diced green bells, minced garlic, tomato sauce, chipotle, cumin, chili powder, kosher salt, garlic salt and oregano, all in a crock pot.

My house smells good enough to lick.

It'll be served in a bowl with shredded cheddar, crackers and sour cream

Made a soft mushroom polenta with brined free range chicken breasts (brined in salt, sugar, juniper berries, cinnamon, bay leaves and pepper flakes), candied fennel, and a roasted beet aioli.

Country Captain with Coconut Rice, and a cranberry stilton cheesecake. Recipes here.

I'd never really heard of country captain before googling around for some regional American dishes. It's not something that should be kept to one region...every person in the world should have a country captain recipe in their kitchen binder. So frickin' good. Not sure mine is authentic, but it is definitely delicious.

I'd lie if I said I made it, but my folks were in town last night and we went to an Irish restaurant called Broachas.

I had the most delish plate of apple bangers and mash evah.

My dad got an amazing lamb stew, and my mom's shepard's pie was not to be scoffed at.

The bread pudding for desert was awesome.

Great meal for a cold and rainy night.

I've got a hankering for some of my dad's famous potato tacos now.

Just some simple unflavored mashed taters. Partially fry corn tortillas into a taco shape, but not quite done. Stuff with potatoes, close up and fry to crispy.

Drown tacos in Frank's Red Hot.

I'm sure now I'd spruce the dish up a bit...but the classic is fantastic.
