Well in regards to droids, how about a specific type? astrotech or whatever r2 is? or IG-88 because he becomes the death star.

Well, wouldn't DROID be more like the species, and then type is more like their fur color or whatever.
They're a very diverse species.

Diagnoga is the beasty that almost kills Luke in the Death Star's trash compactor. Dunno if that counts as a species since it's not really listed in the species in the SW databank.
